These cookies are so ridiculously good that we have to keep our staff from sneaking them all before guests get a chance to enjoy them! We owe Innkeeper Lydia a big thank you for this super-easy and scrumptious recipe.
Gooey Butter Cookies
Makes 2 dozen
Ingredients
1 box yellow cake mix
½ cup butter
½ tsp. vanilla extract
1 8 oz. package of cream cheese, softened
1 egg
powdered sugar
Beat butter, vanilla, egg, and cream cheese in a large bowl with electric mixer until fluffy.
Add cake mix and blend thoroughly.
Cover bowl and chill batter for 10-15 minutes to firm it up a bit.
Preheat oven to 350Ëš.
Place some powdered sugar in a small bowl. Roll batter into 1-inch balls, then roll in powdered sugar and place on a lightly greased or parchment-lined cookie sheet.
Bake for 10-12 minutes. Remove to a wire rack to cool. Sift additional powdered sugar on top, if desired.
