Garden Baked Eggs

Ingredients:
- 2 eggs per person
- 1/2 Cup of Half and Half
- Salt and Pepper, to taste
- Thyme (dried or fresh) to taste
- 2 Cups of Fresh Vegetables (zucchini, yellow squash, onion, grape tomatoes)
- 1/2 Cup of Cheddar Cheese (shredded)
Instructions:

Preheat oven to 350 degrees. Spray 6 (6-oz) ramekins with cooking spray. Mix eggs, half and half, salt, pepper, and thyme. Divide chopped vegetables up evenly between all 6 ramekins. Pour egg mixture in ramekins over the vegetables. Top with cheddar cheese.
You can lay them on a bed of spring mix and sprinkle feta on top, or even make a delicious hollandaise sauce to go along with them.
